Buddha Bowl with Chunky Guacamole

Cook Time: 20 minutes

Ingredients:


● 1 (12-oz) bag cauliflower florets
● 2 large sweet potatoes, cut into 1/2-inch pieces
● Kosher salt and freshly ground black pepper, to taste
● 1 (9-oz) bag shredded romaine lettuce
● 1 pt grape tomatoes
● 1 (15-oz) can fire-roasted corn, drained
● 1 cup jarred sliced roasted red peppers, drained
● 1 pkg Good Foods Chunky Traditional Guacamole
● 2 tbsp chopped fresh parsley

 

Instructions:

  1. 1. Preheat oven to 400°F. Toss cauliflower, potatoes and oil together on rimmed baking sheet until coated. Season with salt and pepper, to taste. Bake, flipping vegetables halfway through, until tender and light golden-brown, about 15-20 minutes.
    2. Divide lettuce among serving bowls. Top with roasted vegetables, tomatoes, corn, peppers and Good Foods Chunky Traditional Guacamole. Top with parsley, and serve.
