Buffalo Breakfast Potatoes

Have a spud-tacular morning with these creamy, spicy breakfast potatoes!

Slices of avocado and a dollop of our Buffalo Style Dip is all you need to jazz up this breakfast side dish.

INGREDIENTS

  • 2 medium white potatoes
  • 1 tbsp avocado oil, or avocado oil spray
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • fresh cracked pepper
  • Good Foods Plant Based Buffalo Style Dip

INSTRUCTIONS

  1. Preheat oven to 400 F and line a baking sheet with parchment paper
  2. Wash and pat dry potatoes, then dice into wedges, then place onto the prepared baking sheet
  3. Coat with avocado oil and seasonings
  4.  Transfer to oven and bake for 15 minutes, give the potatoes a good stir with a spatula, and then bake for another 15 minutes
  5. For that extra crisp factor, turn the temperature to broil and let cook for another 2-3 minutes.
  6. Serve with Good Foods Plant Based Buffalo Style dip. These potatoes make the perfect side to scrambled eggs and avocado.
