Creamy Ranch Potato Packets

Ingredients
- Potato Packets:
- 1.5 lb baby red potatoes, quartered
- ½ yellow onion, coarsely chopped
- 2 Tbsp garlic, minced
- 3 Tbsp olive oil
- Toppings:
- Good Foods Creamy Greek Yogurt Ranch Dip
- 6 strips bacon, cooked until crispy, chopped
- 2 green onions, chopped
- 1 cup mild cheddar cheese, shredded
- Salt & pepper to taste
Directions
- Cut four large pieces of aluminum foil, approximately 15” long. Spray with non-stick cooking spray.
- In a large bowl, add potatoes, onion, garlic and olive oil. Toss to coat.
- Evenly divide potatoes among two pieces of foil, placing potato mix in the center of each piece. Cover with another piece of foil and crimp edges well to seal the packets.
- Place packets on grill over medium heat for about 20 minutes, flipping halfway until potatoes are tender when pierced with a fork.
- Remove the top piece of foil and top with creamy Greek yogurt ranch, crispy bacon, green onions, shredded cheese and salt and pepper to taste. Serve immediately.
