Eggplant Tzatziki Fries

Ingredients
- 1 medium eggplant
- 1 cup panko crumbs
- ½ cup Parmesan cheese
- 1 tsp oregano
- 1 tsp all-purpose Greek seasoning
- ¾ tsp garlic powder
- ¾ cup all-purpose flour
- 2 eggs, lightly beaten
- Good Foods™ Tzatziki Style Dip
Instructions
- Preheat oven to 425°. Line a rimmed baking sheet with parchment paper and coat with cooking spray.
- Cut the eggplant into 1-inch thick rounds, then cut rounds into ½ -inch wide sticks.
- Mix panko crumbs, Parmesan, oregano, Greek seasoning and garlic powder in a medium-sized bowl.
- Dredge eggplant fries in the flour. Next, dip them in the egg, then in panko mixture, turning to coat all sides. Place on paper-lined baking sheet.
- Bake for 8-10 minutes, turning halfway through baking time. Broil for 2-3 minutes until crispy and brown.
- Serve warm with tzatziki dip.
