Eggplant Tzatziki Fries

Ingredients

  • 1 medium eggplant
  • 1 cup panko crumbs
  • ½ cup Parmesan cheese
  • 1 tsp oregano
  • 1 tsp all-purpose Greek seasoning
  • ¾ tsp garlic powder
  • ¾ cup all-purpose flour
  • 2 eggs, lightly beaten
  • Good Foods™ Tzatziki Style Dip

Instructions

  1. Preheat oven to 425°. Line a rimmed baking sheet with parchment paper and coat with cooking spray.
  2. Cut the eggplant into 1-inch thick rounds, then cut rounds into ½ -inch wide sticks.
  3. Mix panko crumbs, Parmesan, oregano, Greek seasoning and garlic powder in a medium-sized bowl.
  4. Dredge eggplant fries in the flour. Next, dip them in the egg, then in panko mixture, turning to coat all sides. Place on paper-lined baking sheet.
  5. Bake for 8-10 minutes, turning halfway through baking time. Broil for 2-3 minutes until crispy and brown.
  6. Serve warm with tzatziki dip.
