Greek Meatball & Farro Bowl

If you’re wondering what farro is… it’s commonly known as the first ever cultivated grain. Farro has been found in tombs of the Egyptian pharaohs and said to have fed Roman legions thousands of years ago.

The trending all-in-one food bowl is back with a Greek twist – farro and meatballs combine for the protein-pack your meal needs.

Cucumbers, fresh herbs and cashews combine to create a Tzatziki Style Dip that makes the perfect “sauce” to be tossed in.

We’re no Greek family, but this recipe will definitely have your tummy saying “Opah!” with each bite.

Greek Meatball & Farro Bowl

Cook Time: 25 minutes

Ingredients

Meatballs

  • 1 lb ground beef
  • ½ lb ground pork
  • ½ cup sweet onion, finely chopped
  • 6 garlic cloves
  • 1 ½ tsp oregano
  • 1 tsp all-purpose Greek seasoning
  • 1 tsp salt
  • ½ tsp pepper
  • 1 large egg, lightly beaten

Farro and Assembly

  • 2 cups farro
  • 4 cups water
  • 4 cups chicken stock
  • 2 tsp all-purpose Greek seasoning
  • 1 cucumber, diced
  • 2 Roma tomatoes, diced
  • 3 tbsp Good Foods™ Tzatziki style dip
  • Parsley, chopped (optional)
  • Lemon juice (optional)

Instructions

  1. Preheat oven to 400°. Line a rimmed baking sheet with aluminum foil. Place a wire rack over foil.
  2. Add beef, pork, onion, garlic, oregano, Greek seasoning, salt, pepper and egg to a medium bowl and mix by hand until well combined.
  3. Shape mixture into approximately 12 – 1 ½ inch balls; place on wire rack.
  4. Bake 20 minutes or until cooked through and golden brown.
  5. While meatballs are baking, rinse 2 cups farro and drain. Combine water and chicken stock in a pot and bring to a boil. Reduce heat and simmer for 20 minutes. Drain any remaining liquid.
  6. Add Greek seasoning to farro, stir.
  7. Combine farro, meatballs,cucumber, tomato and tzatziki dip in a bowl.
  8. Garnish with chopped parsley and a squeeze of lemon juice.

Tips:

  • Treat farro as a pasta, not rice, while cooking. Cook uncovered and drain when cooked. Extend boiling time for a softer consistency.
  • Substitute falafel for meatballs for a vegetarian/vegan alternative.
