Refried Bean Breakfast Tacos

Refried Bean Breakfast Tacos with Good Foods Chunky Guacamole.

Ingredients:

● 1 (15-oz) can refried beans
● 6 large eggs
● 1 teaspoon salt
● ½ teaspoon pepper
● 1 cup shredded cheese, such as cheddar or Monterey Jack
● 8 (6-inch) flour tortillas
● 1 pkg Good Foods Chunky Guacamole
● 1 (10-oz) pkg pico de gallo
● Chopped fresh cilantro, for garnish

Directions:

1. Heat refried beans in a saucepan over medium-low heat, stirring occasionally, until warmed through, about 3-4 minutes. Cover and keep warm on the stove over low heat.

2. Heat butter in a skillet over medium heat. Whisk eggs, salt and pepper in a small bowl until combined. Add eggs to skillet, stirring occasionally, until eggs are cooked to desired doneness, about 1-2 minutes. Remove from heat and top evenly with cheese.

3. Place tortillas on a plate covered with a damp paper towel. Microwave until warmed through, about 30 seconds.

4. Onto each tortilla, evenly spread refried beans and cheesy eggs. Top with Good Foods Chunky Guacamole and pico de gallo. Garnish with cilantro and serve.

Tip: Easily substitute your favorite cheese for cheddar or Monterey Jack cheese!
