1 cup Cooked chicken breast, chopped finely
1/2 cup Black beans, drained
1/2 cup Corn, canned or frozen
1 tbsp Olive oil
1/2 Green bell pepper, finely diced
1 tsp Kosher salt
Fresh cracked black pepper
1 tsp Cumin
1/2 tsp Chili powder
1/2 tsp Garlic powder
1/2 tsp Onion powder
1/2cup Shredded cheddar cheese
1 package Egg roll wrappers
Cooking spray
Directions
- In a medium saute pan, heat 1 tbsp olive oil over medium high heat.
 - Add the chopped bell pepper, salt, pepper, cumin, garlic powder, and onion powder to the pan and cook until the peppers are softened.
 - In a bowl mix together the chicken, sauteed pepper, black beans, corn, and cheese.
 - Spoon into eggroll wrapper and wrap it up. Use a little bit of water at the corner to help seal the eggroll.
 - Place in the airfryer and lightly spray with cooking oil.
 - Cook in the airfryer at 350F for 12-14 min or until golden brown and crispy on the outside.
 - Serve with Good Foods Avocado Salsa and Chunky Guacamole.
