Ingredients

  • 2 chicken breasts, cut into 1/4-inch slices

  • 3 tbsp fajita seasoning, divided

  • 2 tbsp olive oil

  • 1 medium red onion, cut into 1/4-inch slices

  • 1 ea red, green and yellow bell peppers, cut into 1/4-inch slices

  • 12 (6-inch) flour tortillas or corn tortillas, lightly charred

  • 1 pkg Good Foods Chunky Guacamole

  • Chopped fresh cilantro, for garnish

  • Lime wedges, for serving

Directions

  • Toss chicken and 1 tablespoon fajita seasoning in a large bowl until coated. Heat oil in a large skillet over medium-high heat. Working in batches if necessary, add chicken and cook, stirring occasionally until light golden-brown and fully cooked, about 3-5 minutes. Transfer to plate and set aside.
  • In the same skillet, add the peppers, onions and remaining fajita seasoning and cook until vegetables are tender and light golden-brown, about 3-5 minutes. Return chicken to pan and stir to combine.
  • Top tortillas with chicken and vegetable mixture. Dollop with Good Foods Chunky Guacamole and garnish with cilantro. Serve with lime wedges and enjoy.
